Tropical BBQ Sauce

Ingredients:

  • 1/2 Cup Island Oasis® Passion Fruit
  • 1/2 Cup Island Oasis® Mango
  • 1 1/2-inch knob ginger, finely chopped
  • 1 Jalapeno, stem removed
  • 3 Green Onions, chopped
  • 2Tbsp. Vegetable Oil
  • 2 1/2 Cups Ketchup
  • 1/2 Cup Cider Vinegar
  • 1/4 Cup Dark Molasses
  • 1 tsp Dry Mustard
  • Salt and freshly ground black pepper, to taste

Directions:

In a food processor, add the ginger, jalapeno and green onion. Pulse until they are finely chopped. In a medium saucepan, add the vegetable oil over medium heat. Add the ginger mixture and sauté until tender. Combine the ketchup, mango puree, passion fruit puree, cider vinegar, molasses and dry mustard in a bowl and add to the saucepan. Season with salt and pepper. Let simmer for 10 minutes for the flavors to blend.

Passion Fruit Beurre Blanc Sauce

Ingredients:

  • 2 Cups Island Oasis® Passion Fruit
  • 1 tsp. Olive Oil
  • 1 tsp. Shallots, minced
  • 2 Tbsp. White Wine
  • 1/4 Cup Heavy Cream
  • 2 lbs. Unsalted Butter, softened
  • Salt and white ground pepper, to taste

Directions:

1. In a large sauté pan on medium-high heat, add the olive oil and the shallots and sweat for 2 minutes.
2. Deglaze the pan with the white wine and add the passion fruit puree. Let the mixture reduce slowly by three-fourths.
3. Add the cream and reduce again by one-half.
4. Remove the pan from the heat and slowly whisk in the butter in small portions. Be careful not to add too much butter or the sauce may break.

Season with salt and white pepper, to taste.

Ingredients:

  • 2 Cups Heavy Cream
  • 3/4 Cup Sugar
  • 5 Egg Yolks

Directions:

Heat milk and cream until very hot. In a bowl, whisk sugar and egg yolks. Slowly add heated milk and cream to bowl, stirring. Return mixture to pot over low heat. Stir until mixture coats spoon. Consistency should be custard-like. Pour into a bowl and mix with Island Oasis Mango mix. Chill. Churn in ice cream maker.

 

Mango Finishing Sauce

Ingredients:

  • 8 oz. Island Oasis® Mango
  • 1 1/2 Tbsp. Black mustard seed, 1/2 Tsp curry powder
  • 1 1/2 Tsp. Virgin olive oil, 2 Tsp red wine vinegar
  • 1 1/2 Tbsp. Garlic, minced

Directions:

Heat mustard seeds in dry pan until they begin to pop.
Add oil and spices, heat till simmering.
Add Mango mix and heat to a boil.
Spoon over cooked entree and serve.

  • 2 Yellow Onions, chopped

  • 1/4 Cup Light or Dark Brown Sugar
  • 2 Whole Star Anise
  • 1/2 tsp. Ground Allspice
  • 1/4 tsp. Curry Powder
  • 2 Tbsp. Lime Juice
  • 1-2 tsp. Dark Rum

Directions:

Heat oil in a large skillet over medium-high heat for 1 minute. Reduce the heat to medium and add the onion, cooking until it's soft and a little brown around the edges, about 5 to 7 minutes, stirring often. Stir in the guava puree, tomato paste, vinegar, brown sugar, star anise, allspice, and curry powder. Simmer about 5 minutes, stirring occasionally. Turn off the heat and let the sauce cool slightly. Discard the star anise; transfer the mixture to your blender and puree. With the motor running add the lime juice and rum. Transfer to a small bowl and set aside, or refrigerate for up to 2 weeks.

Passion Fruit Salad Dressing

Ingredients:

  • 1/2 cup Island Oasis® Passion Fruit
  • 1/4 cup Canola Oil
  • 2 Tbsp. Lime Juice
  • 2 Tbsp. Vinegar
  • 4 Tbsp. Honey
  • 1 tsp. Salt

Directions:

Combine ingredients in a blender or food processor. Blend until smooth. Store salad dressing in refrigerator for up to one week. Stir or shake before using.
Makes 3/4 cup of salad dressing.

This sweet yet tart dressing goes with many different salads, and it's quick to make in the blender. Try it with a strawberry spinach salad, or with a pear and blue cheese salad.

 

Lemon and Yogurt Mini Bundt cakes

Ingredients:

  • ½ cup Island Oasis® Non-Fat Yogurt
  • 6 Tbsp butter melted
  • 2 Eggs
  • Zest of 1 Lemon
  • 1 cup Flour
  • 6 tbsp Sugar
  • ½ tsp Baking Soda
  • Pinch of salt

Directions:

Grease and flour mini bundt pan or muffin pan.
Preheat oven to 325
In medium bowl mix non-fat yogurt, melted butter, lightly beaten eggs and zest.
In a large bowl, mix flour, baking soda, salt and sugar.
Add wet ingredients to dry mixture. Mix well.
Fill prepared molds and bake for 25-30 minutes.
when out of the oven, cool in molds for 10 minutes.
Take the cakes out of the molds and place on cooling rake.

Icing (opptional)
1-1/3 cup confectioner sugar
Juice of 1 lemon

Put sugar in bowl and add the lemon juice untill it is thick, drizzle ontop of cakes.

Passion Fruit and Ginger Glaze

Ingredients:

  • ¾ cup Island Oasis® Passion Fruit
  • 1 tbsp Butter
  • 1½ tsp Minced Ginger
  • 1 Small Shallot
  • 1 tbsp Apple Juice
  • 1½ tsp Soy Sauce
  • ¼ cup Brown Sugar
  • 1 tbsp Corn Starch mixed in 1 Tbsp Water

Directions:

In a sauce pan, saute shallot and ginger in butter until soft.
Add the rest of the ingredients except the cornstrach and let boil.
Add cornstarch and stir.

Brush over chicken or pork.

 

Yogurty Pancakes

Ingredients:

  • 2 cups Island Oasis® Non-Fat Yogurt
  • 1 Egg
  • 2 tbsp Melted Butter
  • 2 cups Flour
  • ½ tsp Salt
  • ½ tsp Baking Soda

Directions:

Mix dry ingredients in large bowl.
Mix non-fat yogurt and eggs, add to dry ingredients.
Add melted butter.

Cook in a preheated pan that has been buttered or oiled.
Cook on med-high heat for 2 minutes on each side

 

Pina Colada Cupcakes

Ingredients:

  • 1 cup Island Oasis® Pina Colada
  • ¾ cup Rum
  • 1 tsp Vanilla
  • 1½ cups Flour
  • 1 tsp Salt
  • ¼ tsp Salt
  • ½ cup Butter softened
  • 1 cup Sugar
  • 3 Eggs
  • 1 cup Sweetened Coco Flakes
  • 1 cup Crushed Pineapple

Directions:

Preheat oven to 350
Place dry ingredients in large bowl and mix.
In a medium bowl, mix pina colada mix, rum and vanilla.
In a large mixing bowl, beat butter and sugar until fluffy, add eggs one at a time.
Mix in dry ingredients alternately with wet ingredients.
Fold in crushed pineapple and coco flakes.

Fill Muffin tins 3/4 full
Bake for 25 minutes

Coconut Cream Frosting

8 oz cream cheese softened
1/4 cup butter softened
2 cups confectioners sugar
3 tbsps coconut cream

Beat cream cheese, butter and confectioners sugar until smooth. Add coconut cream and mix.

 

Banana Ketchup

Ingredients:

  • 3¾ cups Island Oasis® Banana
  • 2 oz. Sultanas
  • 3 oz. Chopped Onions
  • 2-3 Garlic Cloves, Minced
  • 3 oz. Tomato Paste
  • 1.3 cups Cider Vinegar
  • ½ cup Brown Sugar
  • 1½ tsp Salt
  • ½ tsp Cayenne Pepper
  • 2 oz. Corn Syrup
  • 2 tsp Allspice
  • ¾ tsp Cinnamon
  • ¾ tsp Nutmeg
  • ½ tsp Pepper
  • ¼ Ground Cloves
  • 2 tbsp Rum

Directions:

Combine sultanas, onions, garlic, tomato paste and 1/3 cider vinegar in food processor and process until smooth. Transfer to large saucepan.
Add banana mix, remaing 1 cup vinegar, brown sugar, salt, cayenne and bring to a boil over med-high heat stirring frequently.
Reduce heat to low and cook uncovered and stirring occasionally for 1 hour and 25 minutes.
Add corn syrup, allspice, cinnamon, ntmeg, pepper and garlic. Cook for 15 minutes longer stirring frequently until thick.
Stir in rum, remove from heat and let cool for a few minutes.
Froce sauce through a sieve pressing down hard on the solids. Cool to room temprature.
Store covered in fridge up to 1 month

May also be used as BBQ sauce.

 

Cappuccino Creme Caramel

Ingredients:

  • 1½ cups Island Oasis® Cappuccino
  • 4 Eggs
  • 1 Egg Yolk
  • ½ cup Sugar
  • 1½ cups Milk

Directions:

Preheat oven to 350
Drizzle carmel into bottom of 9 inch cake pan.

Heat milk, cappuccino mix, and sugar over med-high heat in sauce pan until sugar is melted.
Beat eggs and yolk then pour the liquid into this mixture. Mix well.
Pour over caramel covered cake pan.

Bake 40-45 minutes

 

Mango Glaze

Non-alcoholic/Blended

Ingredients:

  • 12½ oz. Island Oasis® Mango
  • ¼ cup Rum
  • ¼ cup Orange Juice
  • Juice from 1 Lime
  • 1 tbsp Honey
  • 1 tbsp Brown Sugar
  • 2 tsp Chili Paste

Directions:

Mix everything into a saucepan, cook on med-high heat and simmer until thick. About 10 minutes

Directions:

Mix everything into saucepan over med-high heat and boil to dissolve sugar.
Once sugar is dissolved turn to low heat to reduce to glaze, about 25 minutes.

 

Spicy Papaya Sauce

Non-alcoholic/Blended

Ingredients:

  • 1 1/3 cups Island Oasis® Papaya
  • 2 tbsp. Olive Oil
  • 1 tbsp. Minced Garlic
  • 1 tbsp. Minced Ginger
  • 1 tbsp. Chopped Onion
  • 1 Large Jalapeno pepper (seeded and chopped)
  • 2 tbsp. Lime Juice

Directions:

Cook garlic, ginger and onion with olive oil until onions are soft.
Add the rest of the ingredients besides the lime juice and simmer over low heat until thick. 10-15 minutes.
Strain sauce then add lime juice.

 

Papaya Ice Cream

Ingredients:

  • 2 cups Island Oasis® Papaya
  • 5 Egg Yolks
  • 2 cups Milk
  • 2 cups Heavy Cream
  • ¾ cup Sugar
  • 1 tbsp. Lime Juice

Directions:

Heat Milk and heavy cream to a boil.
Whisk yolks and sugar.
Add milk and cream mixture to eggs slowly.
Put back in saucepan and heat untill thick like a custard over med-low heat.
Pour in large bowl and whisk in papaya mix, strain and cool before churning.

 

Strawberry Almond Bread

Ingredients:

  • 2 1/4 cups Island Oasis® Strawberry
  • 1 1/4 cups Sugar
  • 1/2 cup Shortening
  • 2 Eggs
  • 2 1/2 cups Flour
  • 1 tsp. Cinnamon
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 1 tsp Almond Extract
  • 1 cup Finley Chopped Almonds

Directions:

Heat oven to 325 degrees
Line, grease and flour 2 5x9 loaf pans

In large bowl beat sugar, butter and shortening till fluffy. Add eggs one at a time.
In separate bowl mix flour, cinnamon, baking soda, baking powder, and salt. Add this mixture , alterntely with the strawberry mix, to the butter mixture.
Add almond extract and almonds.
Blend well without over beating.
Pour into prepared loaf pans.
Bake 55 minutes.
Let pans cool 10 minutes and unmold on racks to cool completely.

 

Mango Ricotta Cheesecake

Ingredients:

  • 1/2 cup Island Oasis® Mango
  • 1/2 lb. Cream Cheese Softened
  • 1 lb. Ricotta softened
  • 3/4 cup Sugar
  • 3 Tbsp. Flour
  • 6 Eggs
  • 1 Tsp. Almond Extract
  • 1 Tbsp. Lime Juice
  • 1/2 cup Diced Mango

Directions:

Preheat oven to 350 degrees.
Butter and sprinkle with sugar 9" sringform pan. Tap out extra sugar.
With a paddle whisk, beat cream cheese till smooth.
Add ricotta and beat till smooth.
Add eggs one by one, beating well after each addition.
Mix in almond extract, ginger, mango mix and lime juice.
Pour into prepared pan.
Swirl in diced mangos.
Wrap pan with foil and blace in bain-marie in oven.
Bake 1 hour.
Turn off oven and leave in oven for another hour.
Cool before slicing.

 

Cherry Lemonade

Alcoholic/Shaken

Ingredients:

  • 2 oz. Island Oasis® Lemonade
  • 2 oz. Island Oasis® Cherry
  • 1¼ oz. Vodka
  • Garnish:

  • Lemon Slice

Directions:
